From our farm to your table, organically fed angus beef.

The secret for good meat is in the feeding and handling of the animals. The fresh meat should hang for at least 2 weeks to gain tenderness.

Tender cuts should be marbled with fine streaks of fat throughout the meat. The amount of marbling determines how tender, juicy and flavorful the meat is. Less tender cuts can be marinated overnight. Beer, lemon juice or other acidic liquids will break down the muscle.

The dividing line between the front and the hind quarter at the top of the chart is taken as the price line. The closer to the line, the more tender the cut. There are approximately 300 lbs. to one side of beef.
